This combination of mushrooms with chicken and snow peas provides pregnant mothers — and everyone else — with a good source of dietary fiber, protein and Vitamins A, B and C. *This recipe is good for 4 servings. What you need:
250 g mushrooms
250 g snow peas, washed & trimmed
200 g chicken, cut into small pieces
4 cloves garlic, minced/chopped
½ cup blanching liquid from mushroom (or use ½ cup plain water)
1½ tbsp oil
1 tsp light soy sauce
2 tbsp rice wine*
1 tsp sugar
1 tsp corn flour mixed with 2 tsp cold water
*Rice wine can be bought in specialist stores that sell Chinese products. As an alternative, you can use dry white wine, apple juice or white grape juice, although the flavor may not be the same.
What you do:
1. Blanch the mushrooms in hot water for 2 minutes.
2. Heat the oil in a pan and fry garlic until fragrant.
3. Add the chicken pieces and stir-fry for 2 minutes.
4. Add the snow peas and stir-fry for 2 minutes.
5. Add the mushrooms and stir-fry them with the other ingredients.
6. Add the remaining ingredients except the corn flour paste.
7. Bring to a boil.
8. Add the corn flour paste and stir until the sauce is thick and clear.
9. Serve.
