Easy Nutrient-Packed Breakfast Recipes

During my first pregnancy, I never thought I’d be over protective about what I eat. In the morning I used to just take in whatever was available and didn’t even bother preparing. Eggs were just eggs, pancakes were just pancakes. Now, I tried adding some nutrition to just eggs and just pancakes.

Let’s bring more life to our breakfast! I’m going to share two very easy recipes that you can cook on a pan or using an air fryer, whatever is convenient for you.

VEGGIE EGG SCRAMBLE

The measurement and quantity of the ingredients depends on how big the family is or if you’re going to eat alone. You can also add other ingredients if you wish, maybe some cheese melt or any crazy cravings you have. Here are my ingredients:

Eggs (beaten)

Onions (sliced thinly)

Tomatoes (sliced in cubes or as desired)

Lettuce (chopped)

Butter/Olive oil

Cooking Procedure :

Mix all the ingredients together into a bowl then add a pinch of salt. Spread a thin layer of butter or olive on the surface of a baking pan. Pour the mixture in the baking pan. Air fry for 5-10 minutes. Then, serve with rice.

MILKY CARROT AND BANANA PANCAKE

Pancake Flour/Mix (bought from the grocery)

1 Egg

1-2 pcs. Bananas (mashed)

1-2 pcs. Carrots (grated)

Milk (any option preferably good for pregnant women or children)

Water

Butter

Cooking Procedure:

Mix all the ingredients together until the desired texture. Melt a good amount of butter into the pan, pour the desired amount of mix into the pan and wait until golden brown then flip to cook the other side. Do the same with the others and then serve with any kind of fruit. You can also serve it with a fruit platter.

These two recipes were the most convenient recipes I’ve done and I can say they are also nutrient-packed. These include folate, protein, omega 3, choline, fibre, vitamin c, lycopene, potassium, calcium and many more that can aid in pregnancy and foetal development. Remember, every meal should be a hearty meal with the family for a healthy mind and body.
