One of the biggest highlights is the rapid rise of new-generation apple varieties, estimated to hit 145,000 tons this year, marking an impressive 51% growth. This is especially significant as total European apple production is at its lowest since 2017. Despite this, the French apple industry continues to show resilience, consistency, and quality.

Leche Flan Layer

4 egg yolks

1 can (300 ml) condensed milk

Apple Topping

2 French apples (Gala or Pink Lady), peeled and thinly sliced

2 tbsp brown sugar

Instructions

Make the crust. Combine flour, sugar, and salt. Cut in butter until crumbly. Add cold water gradually until dough forms. Chill 30 minutes, roll out, and press into tart pan. Pre-bake at 180°C (350°F) for 15 minutes.

Prepare the flan. Whisk yolks, condensed milk, evaporated milk, and vanilla. Pour into pre-baked crust.

Cook the apples. Sauté apples in butter, brown sugar, and cinnamon for 5–7 minutes until caramelized.
