Here’s a culinary trivia: Did you know that the name Mechado ay galing sa Spanish word na mecha which meanswick? Ang tawag sa Tagalog ng wick ay mitsa—yung puting tali na nakausli sa kandila na sinisindihan ng posporo. You’d probably ask, anong konek ng mitsa ng kandila sa masarap na ulam ng mga Pinoy na ang pangalan ay Mechado?

Beef Mechado recipe na mapapa-wow ka sa sarap

Well, this Spanish-influenced dish dates back hundreds of years ago. Sa pagluluto ng rich, savory Mechado, ginagamit ang kitchen tool na ang tawag ay larding needle at binubutasan nang pahaba ang karne ng baka.

Isinusuot sa butas na ‘yon ang strips of pork fat (taba ng baboy). This way, dahil nakausli sa dulo ng karne ang puting taba ng baboy, nagmumukha itong wick or mecha/mitsa. Hence, the word mechado/mitsado.

Ang tawag sa cooking technique na ito ay larding. Kapag naluto umano kasi ang karne na ni-lard, nalulusaw ‘yung taba ng baboy, so mas moist, mas malinamnam at mas malambot ang karne.

Hanggang ngayon may mga cooks who swear na hindi sila gumagamit ng canned or packaged tomato sauce sa kanilang mechado. Gagamit lang talaga sila ng fresh na kamatis o tomatoes! As in sariwang kamatis only.

A few years back, may naging diskusyon online kung ano ba ang pagkakaiba ng Mechado, Afritada at Kaldereta. Kasi pare pareho nga umanong may patatas, carrots, bell peppers at sarsang tomato-based. For me, madali nang ihiwalay diyan ‘yung Kaldereta, kasi ito lang iyong may sangkap na liver spread (Reno brand, syempre!:) at may anghang ang timpla.

‘Yung dalawa, wala. Para mai-differentiate naman ang Afritada sa Mechado, ang afritada, puwedeng manok or baboy na may kahalong green peas at minsan hotdog. Whereas ang Mechado walang ganung sangkap and it has a richer, deeper flavor; at ang sauce ng mechado ay malapaot na para nang gravey. Samantalang ang sauce ng Afritada ay malabnaw.

For this recipe, we are doing the modern-ish version. No larding required. And we are doing away with the fresh tomatoes. Try this!

Mga Sangkap (Ingredients):

  • 4 kutsarang calamansi juice
  • 3 kutsarang toyo
  • 1 kilong beef chuck (kadera o batok), cut into medium chunks 5 kutsarang mantika
  • 6 butil ng bawang, tinatadtad nang pino
  • 1 medium sibuyas na puti
  • 2 tasang tubig
  • 1 tasang tomato sauce
  • 1 beef buillon cube
  • 3 medium papatas, peeld, cut into quarters
  • 1 berdeng bell pepper, cut into chunks
  • 2 medium carrots, peeled, cut into chunks
  • 1 pulang bell pepper, cut into chunks
  • 2 maliit na dahon ng laurel
  • 1 kutsaritang pamintang durog

1. Paghaluin ang kalamansi juice at toyo. Ibabad ang karne and marinate for 1 hour.
2. Sa malaking kawali, painitin ang tatlong kutsarang mantika. Prituhin nang bahagya ang beef hanggang sa maging medyo dark brown all over. Itabi muna.
3. Sa isang malaking pot, igisa ang bawang at sibuyas sa dalawang kutsarang mantika. Pag soft and translucent na ang sibuyas, ilagay ang pina-brown na karne. Ibuhos ang natirang marinade. Haluin.
4. Ilagay ang tubig at tomato sauce, beef cube. Tunawin ang cube at haluin.
5. Ilagay ang dahon ng laurel. Pakuluin.
6. Takpan. Hinaan ang apoy and let it simmer sa loob ng isa’t kalahating oras or until the beef is fork tender.
7. Ilagay ang patatas at carrots. Cook until tender, about 5-8 minutes.
8. Ilagay ang berde at pulang bell peppers. Takpan. Patayin na ang apoy.
9. Serve with steaming white rice.
