My Favorite Food and Recipe

Filipino chicken stews come in the form of chicken adobo. After being pan-fried and stewed until tender, chicken pieces are marinated in soy sauce and seasonings. The dish's wonderful flavor and simplicity of preparation contributed to its appeal.

Chicken adobo is a cuisine that is traditional and wholly Pinoy, and it is adored by many people all across the nation. Although there have been many other adobo dishes throughout the years, chicken adobo is still one of the most well-liked, and for good reason!

Chicken adobo is comfort food that appeals to people of all ages due to the taste of juicy chicken in a luscious, umami adobo sauce. Kids and adults alike can't get enough of this delectable feast!

There are two absolute truths regarding chicken adobo: every Filipino family has their recipe, which is unquestionably the best; second, every chicken adobo tastes better the next day.

Over the years, my parents' recipe remained largely unchanged, and it was as easy as can be: A pot was filled with water, soy sauce, and vinegar; additional ingredients were some brown sugar, a ton of garlic, entire black peppercorns, and a few withered, brittle shards of bay leaf. The pot was then filled with chicken legs, thighs, and wings, and everything was cooked for around 30 to 40 minutes.

Let me share with you our ersion of Chicken Adobo.

Ingredients

2 pounds of chicken

3 dried bay leaves

Soy sauce, 8 teaspoons

White vinegar, 4 tablespoons

5 smashed garlic cloves

1.5 cups of water

cooking oil, 3 teaspoons

1/8 cup sugar

optional 1/4 teaspoon salt

whole peppercorn in a teaspoon

Instructions:

In a big bowl, mix the chicken, soy sauce, and garlic. Mix well. Chicken should be marinated for at least an hour. Heat the pan and put oil.

The chicken should be pan-fried for two minutes on each side once the oil is hot enough.

Add the remaining marinade, along with the garlic. add water up to a boil.

Add whole peppercorns and dried bay leaves. Simmer the chicken for 30 minutes, or until it is cooked.

Include vinegar. Cook for 10 minutes while stirring.
