Herbed Chicken Fillet with Creamy Garlic Sauce
1lb chicken thigh fillet, pounded thin
salt & pepper
3 tsp cooking oil
1 tsp chopped fresh or dried basil
3 tsp all purpose cream
3 tsp milk
1/4 tsp finely chopped garlic
salt and pepper to taste
1. Season chicken with basil, salt and pepper. Cook in an olive oil or nonstick sprayed skillet over medium-high heat until no longer pink in the center then remove to a plate and set aside.
2. Turn heat down to medium. Add the garlic, add the milk and the cream. Stir until creamy.
3. Spoon sauce over cooked chicken then serve.
